Basilisk is an imaginative rosé composed of a blend of whole-cluster pressed Pinot Noir grown on our estate vineyard in the Sta. Rita Hills and a delicate touch of Viognier from Zaca Mesa Vineyard. The Viognier, used sparingly, lends subtle floral aromatics and a distinct oily minerality to the blend, creating a unique texture without overpowering the core of the wine. Fermented and aged for 8 months in a combination of neutral oak and stainless steel, this rosé brings forth soft red fruits with lively acidity and pronounced minerality, perfectly balancing complexity and freshness. On the palate, expect bright flavors of strawberries and cream alongside lime zest, all leading to a crisp, dry finish. Made with native yeast fermentation, minimal sulfite additions, and bottled unfined and unfiltered, Basilisk is a rosé that challenges convention while remaining incredibly drinkable.
