Made in a pét nat style, creating its natural, gentle effervescence. Fermented with native yeast in stainless steel, it remains undisgorged on its lees and unfiltered, giving the wine its slight haze and added texture.
Hazy lemon-yellow in the glass, ‘Pét White’ opens with lemon zest, yuzu, green apple, sea spray, and a hint of fresh brioche. Meyer lemon, pear skin, and white peach lead the palate, with subtle nuttiness and a soft creaminess from the lees. High acidity and saline minerality carry through to a bone-dry, refreshing finish.
