‘Chat Noir’ is our playful take on Dornfelder—a dark-skinned grape rarely seen in California. Harvested at low sugars for naturally high acidity, the fruit was fermented entirely by carbonic maceration before finishing in neutral oak, creating a fresh and vibrant style. Deep purple in the glass, it opens with aromas of blackberry, graphite, and wet stone. The palate is bright and energetic, with juicy dark fruit layered over savory hints of roasted meat and iron. Brisk acidity and light tannins make it especially refreshing when served with a slight chill. A lively, mineral-driven red built for the table—or the picnic blanket.
