2023 'P.C.H.' is made entirely from Pinot Noir grown on our estate vineyard in the Sta. Rita Hills of Santa Barbara County. This allows us to meticulously manage both the farming and har vesting of the grapes. This is particularly important for rosé, which is often made as a by-product of red winemaking. However, this is not the case here, 'P.C.H.' is grown and harvested specifically to become a rosé. Upon arrival at the winery, the grapes are lightly crushed and left to soak with the skins and juice for a couple of hours. This process integrates flavor and color before the grapes are whole-cluster pressed, then fermented in stainless steel.
