About The Wine
Our Tower 15, 2021 Gamay is a juicy red wine that offers delicate floral aromas alongside subtle earthy notes. The grapes for this vintage come from
Nolan Vineyard in Alisos Canyon, where loamy granite rich soils nurture young vines growing beneath complimentary warm-to-hot days and cool
nights. All grapes were hand sorted and destemmed before they were cold soaked for five days with intermittent punchdowns and pumpovers. During
fermentation this wine was punched down up to three times each day until complete. The wine was drained and pressed into 100% neutral French
oak barrels.
The juice is fermented using only native, natural yeast alive in the air and on the grapes. Nothing is added throughout the wine's elevage, resulting in
a wine that is rich and complex with strong primary fruit flavors and acid, and remains unfined and unfiltered.

Winemaker Notes
Bright and aromatic with deep raspberries, mashed plums and freshly cut flowers. Soft tannins and juicy acidity provide the background for flavors of
currants and violets with hints of wet earth and potting soil.
