About The Wine

Our Tower 15, 2018 Cabernet Sauvignon is a true-classic with notes of heavy red and black fruit backed by noticeable tannins. The grapes for this vintage come from Old Oak Vineyard in the Willow Creek District of Paso Robles. The vineyard is named after a spectacular live oak that is estimated to be over 500 years old. This wine was fermented in small open-top tanks and punched down by hand three times daily during its initial fermentation. It was then barrel-aged for 18 months, during which it underwent malolactic fermentation, in 30% new French oak barrels, balanced with neutral French oak barrels prior to bottling. The majority of our Cabernet Sauvignon was added to our 'Swell' blend, leaving only a limited amount for this single varietal bottling.

The AVA

The Willow Creek District of Paso Robles has similar features to FranceÕs Rhone Valley. Fog from the coast infiltrates the mountain gaps and spills into different plateaus and arroyos which often are the same paths for consistent ocean breezes.

Winemaker Notes

Big berry aromatics with cedar, cigar box, earth, leather and iron. Centered on black-red currant and blackberry jam.
