About The Wine
Chenin Blanc wears many hats, and Its character can changes drastically to cover an array of flavors and style. We've worked with Chenin Blanc from Jurassic Park Vineyard for almost 10 years, and this vintage we decided tried an entirely new approach. The grapes were harvested together, but split into two even groups at the winery. One half was fermented with skin-contact for 15 days before pressed into 100% neutral French oak barrels. The other half was immediately pressed into a stainless steel tank without skin-contact. Both wines were delicately racked off of their lees using gravity. The wines were blended and briefly aged for 60 days in 100% neutral French oak barrels before bottled. The juice is fermented using only native, natural yeast alive in the air and on the grapes. Nothing is added throughout the wine's elevage, resulting in a wine that is rich and complex with strong primary fruit flavors and acid, and remains unfined and unfiltered.
The AVA
The Santa Ynez Valley is a long, east-west corridor, with very cool temperatures on the coast that become progressively warmer inland. Consequently, several varietals do well, from Pinot Noir in the west to Cabernet, Merlot, Sauvignon Blanc in the east. Rhone varietals such as Syrah, Grenache, Mourvedre, Roussanne, and Viognier also thrive in the Santa Ynez.
Winemaker Notes
Color is amber yellow with opal haziness. Notes of honey and chamomile tea, with ripe yellow apple and marmalade. A touch of tannin.
