Our Tower 15, 2019 Zinfandel makes for a high-acid, and big, bold wine with distinct flavors of black fruits and spices that the vareital is notable for. The grapes for this bottling are farmed organically at Charlie's Vineyard in the Willow Creek District of Paso Robles. Charlie's Vineyard is a very small, family owned vineyard operated for over 40 years. This wine was hand picked and immediately destemmed upon arrival. After 5 days of cold soaking with intermittent punch-downs and pump-overs, our fermentation process began. Over the course of its fermentation we punched-down daily. When fermentation was completed, we drained and pressed into a combination of new French & American oak barrels and 70% neutral French oak barrels for 18 months before bottling.
