Pali, 2021 Rosé of Pinot Noir 'P.C.H.'

About The Wine

In 2018 we introduced ‘P.C.H.’ to showcase select barrels of rosé made from Pinot Noir grown on some of our favorite vineyards on the Central Coast. Today, our ‘P.C.H.’ is crafted from Pinot Noir grapes grown on Pali Vineyard, our 50-acre vineyard that sits on a gentle southeast facing slope comprising mostly sandy soil, and other premium vineyards on the Central Coast. When made into a rosé, Pinot Noir maintains its light, fruity characteristics and stunning acidity, resulting in a delicious and elegant pink wine. This rosé is made entirely from whole-cluster pressed Pinot Noir. The grapes were picked and gently pressed into a stainless steel tank, and after two days of settling, the juice was racked off its lees into another tank where it began its fermentation. Mid-fermentation, the wine was barreled into 100% neutral French oak barrels that were previously used for red wine aging. We stirred the barrels every day, maintaining fermentation temperature below 68°F, until the wine was bone-dry. P.C.H. was barrel-aged in 100% neutral oak for 90 days before bottled.

The AVA

With a total area of 30,720 acres, the Sta. Rita Hills AVA is home to over 59 vineyards, totaling 2,700 hundred acres planted to Pinot Noir, Chardonnay and 18 other cool climate wine grape varieties. The combination of a purely East/West maritime throat, poor marine-based soils, elevated calcium in the soil and the Pacific’s cooling influence through fog, wind and moderating summer heat combine to form one of the world’s best cool-climate viticulture areas for Pinot Noir and Chardonnay.

Winemaker Notes

A refreshing ocean breeze with lemon, blood orange, and watermelon mingle around beautifully integrated acidity and a lasting burst of strawberry and cherry.
