After jumping around vineyards to find great Petite Sirah vines, we finally landed on Defiance Vineyard in East Paso Robles. The vineyard is boutique in scale, only growing enough grapes for us and a couple lucky wineries, and they are just as committed to sustainability as we are; no herbicides, completely hands on farming, natural cover-crop rotation, and organic cow manure compost. The resulting wine is dark indigo, the palate is thick and heavy and vibrant, and the tannins are chiseled. Enjoy this one with a juicy burger!
